Blueberry Muffins - cooking recipe

Ingredients
    2 c. sifted flour (reserve 1/4 c.)
    3 Tbsp. baking powder
    1/2 tsp. salt
    1 c. Morningstar Farms Scramblers
    1/3 c. polyunsaturated oil
Preparation
    Reserve 1/4 cup flour.
    Combine and stir 1 1/4 cups flour, sugar, baking powder and salt into a bowl.
    Combine milk, Scramblers and oil.
    Beat with a rotary beater until well mixed. Make a well in center of dry ingredients; add wet ingredients and stir until moistened.
    Do not overmix.
    Combine reserved flour and 1/2 cup whole frozen blueberries.
    Toss.
    Fold into batter and mix just until blueberries are evenly distributed.
    Fill margarine-coated 2 1/2-inch muffin cups 2/3 full.
    Bake at 400\u00b0 for 20 minutes or until done.
    Remove from cups.
    Serve hot.
    Makes 12 muffins.
