Fruit Cake Cups - cooking recipe
Ingredients

15 oz. golden raisins (2 1/2 c.)
1 c. frozen orange juice
1/2 c. margarine
1 c. orange marmalade
1/4 c. brandy or bourbon (optional) or more orange juice
1 large egg, beaten
1 c. nuts
2 c. candied chopped fruit
2 c. sifted flour
1 tsp. salt
1/2 tsp. soda
1/2 tsp. nutmeg
1 tsp. cinnamon
Preparation

Mix together raisins, margarine and orange juice.
Simmer 10 minutes.
Cool and add marmalade.
Mix in other liquid, egg, nuts and fruit.
Sift together dry ingredients and fold in last.
Add cherries and nuts for garnish (optional).
Cook in small muffin tins at 300\u00b0 for 30 minutes or more depending on size of tins. Makes 18 to 36.
Fill tins 2/3 to 3/4 full.
Store tightly covered in tin or plastic container.
Keeps well.
