Double Apple Muffins - cooking recipe

Ingredients
    3/4 c. all-purpose flour
    3/4 c. whole wheat flour
    1 tsp. baking soda
    1/2 tsp. baking powder
    2 3/4 tsp. ground cinnamon
    1/2 tsp. ground nutmeg
    1 c. applesauce (unsweetened)
    1 egg
    2 Tbsp. plus 2 tsp. vegetable oil
    2 tsp. vanilla extract
    artificial sweetener equivalent to 12 tsp. sugar
    2 small Granny Smith apples, cut in 1/4-inch pieces
Preparation
    Preheat oven to 375\u00b0.
    In a large bowl, combine both flours, baking soda, baking powder, cinnamon and nutmeg.
    Mix well.
    In a blender container, combine applesauce, egg, oil, vanilla and sweetener.
    Blend until smooth.
    Stir in apples (I sometimes add raisins and pecans).
    Add applesauce mixture to dry ingredients. Mix until all ingredients are moistened.
    Spoon batter into 8 muffin cups that have been sprayed with a nonstick cooking spray (sometimes I use mini muffin pans).
    Bake 20 to 22 minutes, until a toothpick inserted in the center of muffin comes out clean. Remove to rack to cool.
    Delicious hot or cold.
