Fried Eggplant - cooking recipe

Ingredients
    1 big Eggplant
    2 c. Olive Oil
    1 box Bacalaitos Mixture
    1 tsp. Adobo/salt
Preparation
    Mix bacalaitos according to instructions on box.
    Mix well and pour mixture in a deep bowl.
    Add adobo if desired.
    Heat pan with oil till hot.
    Cut eggplant into slices.
    Dip into the bacalaito mixture and place in pan.
    Cook each side for 1-2 minutes and remove from pan.
    Cool for a few minutes before serving.
