Turnip Greens - cooking recipe

Ingredients
    2 to 2 1/2 lb. turnip greens
    salt pork strips
    salt
    water
Preparation
    Pick over the leaves of the greens and remove any spotted parts or discolored leaves and stems.
    Wash the leaves carefully and thoroughly, until they are free of sand and soil.
    The turnip greens will have edible white roots.
    Trim the stem top and root part from each and wash thoroughly.
    Slice and cut into quarters and cook with the leaves.
    Place all in a large saucepan and add a little water, salt to taste and the salt pork.
    Bring to a boil; reduce the heat and simmer until just tender, 20 to 30 minutes. Remove from the heat; drain and serve immediately.
    Greens are delicious served with pork chops, sweet potatoes and cornbread. Serves 4.
