Watermelon Rind Preserves - cooking recipe

Ingredients
    watermelon rind, cut in small pieces with a little red showing
    3 Tbsp. salt
    3 lb. sugar
    2 Tbsp. lemon juice
    2 oz. water
Preparation
    Peel and cut melon rind into small pieces, leaving a little red.
    Soak in salt for 1 to 1 1/2 hours.
    Drain and rinse until it doesn't taste salty.
    Cover with sugar.
    Shake to make sure each piece is covered.
    Let stand overnight.
