Orange Carrot Cake - cooking recipe

Ingredients
    1 c. vegetable oil
    2 c. sugar
    1 tsp. cinnamon
    1/2 tsp. nutmeg
    1 Tbsp. grated orange rind
    4 eggs
    1 1/2 c. grated, raw, scraped carrots
    2/3 c. finely chopped walnuts
    3 c. sifted flour (all-purpose)
    1 Tbsp. baking powder
    1/2 tsp. salt (optional)
    1/3 c. orange juice
Preparation
    Combine vegetable oil and sugar.
    Mix and add cinnamon, nutmeg and orange rind.
    Separate yolks and egg whites; beat egg whites until foamy consistency.
    Add one yolk at a time with equal parts of foamy egg white.
    Add carrots and walnuts.
    Sift together and mix flour, baking powder and salt.
    Add alternately with the orange juice.
    Mix at high speed for 1 minute.
    Pour batter into a greased and floured or nonstick 10-inch tube pan.
