Newfangled Green Bean Casserole - cooking recipe

Ingredients
    2 lb. fresh green beans, halved
    1 c. vegetable oil
    6 large shallots (1/2 lb.), thinly sliced
    2 tsp. water
    6 Tbsp. all-purpose flour
    1 1/2 tsp. salt
    3 Tbsp. unsalted butter
    1/4 lb. each cremini and white button mushrooms, cleaned and sliced
    2 c. whole milk
    1 tsp. chopped fresh rosemary
    1/2 tsp. black pepper
Preparation
    Working with half of the beans at a time, cook in boiling salted water, stirring often, 4 to 5 minutes until bright green and crisp-tender. Remove with tongs to bowl of ice water. Drain well on paper towels. (Can be made 2 days ahead. Wrap in paper towels and place in plastic food storage bag; refrigerate.)
