Chicken Or Turkey Croquettes - cooking recipe

Ingredients
    3 1/2 c. coarsely chopped chicken or turkey
    2 Tbsp. butter
    3 finely minced onion
    3 Tbsp. flour
    1 1/2 c. chicken broth
    salt and freshly ground pepper to taste
    1/4 tsp. nutmeg
    3 drops Tabasco
    3 egg yolks, beaten
    flour for dredging
    1 egg, lightly beaten
    3 Tbsp. water
    1 1/2 c. fresh bread crumbs
    oil for frying
    mushroom sauce
Preparation
    Melt the butter in saucepan and add onion, stirring until wilted.
    Sprinkle with flour and stir with a wire whisk as you add the chicken broth.
    Stir rapidly.
    Stir in chicken and add salt and pepper, nutmeg and Tabasco.
    Remove from heat, add yolks return to heat.
    Cook about 2 minutes, stirring constantly.
    Spoon in an 8 x 8 x 2-inch dish that has been buttered.
    Cover with buttered wax paper.
    Chill overnight.
