Zucchini Bread - cooking recipe

Ingredients
    1 c. granulated sugar
    2 eggs
    1/2 c. vegetable oil
    1 tsp. vanilla
    1 1/2 tsp. grated orange rind
    1 1/2 c. all-purpose flour or 1/2 whole wheat
    1 tsp. cinnamon
    1/4 tsp. nutmeg
    1/2 tsp. each: salt, baking powder and baking soda
    1/2 c. raisins
    1/2 c. chopped nuts
    1 c. grated fresh or frozen and thawed zucchini (strain if using frozen)
Preparation
    In large bowl, beat together sugar, oil and eggs.
    Mix in orange rind and vanilla.
    Stir together in another bowl flour(s), cinnamon, salt, baking powder, baking soda and nutmeg.
    Mix in raisins and nuts.
    Stir into batter alternately zucchini, making 3 additions of dry ingredients and 2 of zucchini.
    Transfer to greased 8 x 4-inch loaf pan.
    Bake in 350\u00b0 oven for 45 to 60 minutes.
    Let cool 10 minutes in pan.
    Turn out to cool on wire rack.
    Wrap in foil or Saran.
    Better the next day.
