Strawberry Preserves - cooking recipe
Ingredients

1 1/2 qt. strawberries, washed and hulled
5 c. sugar
1/3 c. lemon juice
Preparation

Combine berries and sugar in Dutch oven.
Mix well, let stand 3 to 4 hours.
Slowly bring to boil until sugar dissolves.
Stir in lemon juice.
Remove from heat and skim off foam with metal spoon.
Remove fruit from syrup with slotted spoon and place in shallow pan.
Bring syrup to boil, cook 10 minutes.
Pour syrup over berries.
Let stand 24 hours.
Shake pan occasionally so berries will absorb syrup and remain whole.
Place preserves into hot jars.
Makes 4 pints.
