Rice And Spinach Soup - cooking recipe

Ingredients
    1 lb. spinach, cleaned, stems removed and boiled 1 minute
    2 medium onions, peeled and chopped
    2 medium cloves garlic, peeled and crushed
    1/4 lb. Parmesan cheese, grated
    6 Tbsp. olive oil
    2 Tbsp. butter
    2 1/2 qt. canned chicken broth
    3/4 c. long grain rice
    freshly ground pepper
Preparation
    Chop spinach.
    Heat oil and butter in a 6-quart soup kettle. Add garlic and onions; saute until softened, about 5 minutes.
    Add chopped spinach and saute 3 additional minutes.
    Add rice and simmer until tender, about 20 minutes.
    Ladle soup into warm bowls and sprinkle with pepper and cheese.
    Serve immediately.
