Fresh Peach Muffins - cooking recipe

Ingredients
    1 c. sugar
    1 stick margarine, softened
    almond flavoring
    3 large, very ripe peaches, mashed
    2 eggs, beaten
    2 c. self-rising flour
    chopped nuts
Preparation
    Cream sugar and margarine with a few drops of almond flavoring.
    Add peaches and beaten eggs.
    Mix thoroughly.
    Add flour.
    Work mixture quickly but do not overmix.
    Pour mixture into 18 greased muffin cups.
    Sprinkle chopped nuts over top of muffin batter.
    Bake at 350\u00b0 until golden brown.
    Yields 18 muffins.
