Squash Casserole - cooking recipe

Ingredients
    2 to 3 lb. squash
    1 onion, diced
    1 carrot, grated
    2 sticks butter
    1 (8 oz.) carton sour cream
    1 can cream of mushroom soup
    1 pkg. herb stuffing
Preparation
    Cook onion and squash.
    Drain.
    Mix squash, onion, carrot, soup and sour cream.
    In separate pan, melt butter; add stuffing and mix thoroughly.
    Layer pan first with stuffing, then squash.
    Top with remaining stuffing.
    Cook 20 to 30 minutes at 350\u00b0, covered.
    Cook, uncovered, if crunchier topping desired.
