Old Fashioned Potatoes With Thickening - cooking recipe
Ingredients

2 lb. medium potatoes or small new potatoes
1 qt. water
4 Tbsp. butter
1/8 tsp. salt
generous dash of pepper
3 Tbsp. cornstarch
1/4 c. milk
Preparation

Peel potatoes and quarter (scrape new potatoes and leave whole).
Add water, butter, salt and pepper.
Bring to a rolling boil and reduce heat to simmer.
Cook about 30 minutes or until potatoes are tender.
Remove from heat.
In small bowl, mix cornstarch with milk.
Pour over potatoes and stir well.
Return to medium heat and cook until the liquid thickens.
Stir frequently.
Yields 4 to 6 servings.
