Herbed Shad With Edible Bones - cooking recipe

Ingredients
    3 to 4 lb. dressed shad
    lemon and pepper seasoning
    3 to 4 c. water or 1/2 water and white wine
    2 stalks celery, broken in 2-inch pieces
    1 Tbsp. instant minced onion or 1 small onion, chopped
    2 bay leaves
Preparation
    Wash and dry shad.
    Sprinkle inside with lemon and pepper. Place fish on rack in baking pan.
    Add liquid to a level just below fish.
    Add rest of ingredients.
    Cover tightly.
    Let steam in a 350\u00b0 oven for 5 hours.
    Baste frequently.
    Serves 6.
