Garden Casserole - cooking recipe

Ingredients
    2 c. cooked brown rice
    2 c. broccoli, cut into 1/2-inch strips, from flower through stalk
    2 c. carrots, cut into julienne strips
    1 c. zucchini, sliced diagonally
    1 c. green beans
    1 tsp. soy sauce
    1 (16 oz.) jar Marinara Sauce
    1 c. shredded Longhorn cheese
    1 c. shredded Monterey Jack cheese
Preparation
    Grease a baking dish; place rice in bottom.
    Cook broccoli, carrots, zucchini and beans in boiling salted water until tender, 5 to 7 minutes; drain.
    Reserve 4 zucchini slices for garnish. Spoon vegetables over rice.
    Combine soy sauce and Marinara Sauce; pour over vegetables.
    Cover dish with foil and bake 30 minutes. Combine cheeses; sprinkle over casserole and continue baking until cheeses melt, about 5 minutes.
    Garnish with zucchini slices and serve.
