Parisienne Potatoes - cooking recipe

Ingredients
    4 medium potatoes, pared
    2 Tbsp. butter
    3 Tbsp. minced parsley
Preparation
    Using a melon baller, scoop out 6 balls from each potato. Place potato balls in a saucepan with water to cover.
    Cook until tender; drain well.
    Saute potato balls in butter until golden brown.
    Toss with parsley.
    For 8 people.
