Duke'S Crab Cakes - cooking recipe
Ingredients

3 lb. backfin crabmeat
3 medium eggs
6 tsp. mayonnaise
3/4 c. saltine crumbs (fine)
1/3 tsp. white pepper
4 1/2 tsp. chopped dried parsley
1 1/2 tsp. dry mustard
3/4 tsp. salt
Preparation

Pick the crabmeat to remove shells.
Mix all ingredients with crabmeat.
Be careful not to break up the crabmeat too much. Portion crabcakes by using a ice cream scoop.
Place crabcakes on sheet pan with deli paper.
Place in frying pan or oven.
Cook until done.
