Awfully Good Beans - cooking recipe
Ingredients
-
2 c. dried navy white beans
3/4 stick butter
5 Tbsp. good quality olive oil
1 1/2 tsp. summer savory or dried marjoram
3/4 c. chopped, seeded, peeled, fresh tomatoes
salt and ground white pepper to taste
Preparation
-
Pick over beans; rinse well.
Cover with water; bring to a boil for 5 minutes.
Allow to stand in the water, uncovered, for 1 hour.
Drain beans and place them in a saucepan with water to cover.
Simmer, partially covered, until the beans are tender, but not mushy, about 45 minutes.
Heat the butter and olive oil in a heavy saucepan.
Add the beans, marjoram or savory, tomatoes, salt and pepper.
Cook 5 to 8 minutes.
The beans should taste awfully good and be soft, but not mushy.
