Blue'S Okra Gumbo - cooking recipe

Ingredients
    1 medium onion, chopped
    8 c. okra, sliced in small pieces
    1/2 c. oil
    3 tsp. chopped parsley
    2 sticks celery, chopped
    3 lb. shrimp or 1 fryer or 2 lb. shrimp and 1 lb. crabmeat
Preparation
    Smother okra in 1/2 cup oil, stirring frequently until no longer stringy.
    Mix the smothered okra with the other ingredients, adding water to get the desired consistency.
    Add roux and bring to a boil.
    Simmer until the meats are done.
    Serve over hot rice.
