Southern Peas And Rice - cooking recipe

Ingredients
    2 slices bacon, diced
    3/4 c. chopped onion
    3/4 c. chopped green pepper
    3 c. cooked rice
    1 tsp. salt
    1 large tomato, diced
    3 c. hot, well seasoned, cooked dried black-eyed peas
Preparation
    Fry bacon until crisp.
    Remove bacon and drain on absorbent paper.
    Saute onion and green pepper in bacon drippings until tender-crisp.
    Stir in rice and salt.
    Heat thoroughly.
    Add tomato and bacon; toss lightly.
    Spoon rice into serving dishes and top with peas.
    Serves 6.
