Pumpkin Pie - cooking recipe
Ingredients

1/4 c. cold water
1 envelope unflavored Knox gelatine
1/4 c. boiling water
1 (1.7 oz.) pkg. vanilla sugar-free Jell-O instant pudding (6 servings)
3 c. milk (2%)
2 tsp. pumpkin pie spice
3 c. pumpkin (large can)
1/4 c. Sugar Twin brown sugar substitute
2 cooked 9-inch pie shells
Preparation

Dissolve Knox gelatine in 1/4 cup cold water. Put 1/4 cup boiling water in mixer bowl. Add dissolved gelatine. Stir to thoroughly mix. When mixture cools, add pudding mix, spice and milk. Beat at low speed until mixture is smooth, about 2 minutes. Add pumpkin and brown sugar substitute. Beat until well blended. Pour into 2 cooked pie shells. Can pour in bowl and serve as a pudding. Makes 2 pies.
