Divinity Candy - cooking recipe
Ingredients

2 1/2 c sugar
1/2 c light corn syrup
1/2 c water
2 egg whites
1 tsp. vanilla
1/4 tsp. salt
Preparation

In heavy (2-quart) saucepan, combine sugar, corn syrup, water and salt.
Cook and stir until sugar dissolves and mixture boils. Cook over medium heat (candy thermometer reaches 250, hard boil stage), without stirring and bubbling over entire surface.
As temperature nears 250, beat egg whites to stiff peaks.
Gradually pour hot syrup in thin stream over egg whites, beating at high speed; beat 4-5 minutes more until mixture holds its shape.
Drop by teaspoonfuls onto waxed paper or spread in buttered 10x6 inch dish.
Cool and cut into squares.
Makes 3 dozen pieces.
May add candied cherries or chopped nuts after 5 minutes beating time.
