Lemon Dijon Chicken - cooking recipe

1/2 c. fine breadcrumbs
2 tsp. grated lemon rind
3 Tbsp. lemon juice
2 Tbsp. country-style Dijon mustard
1 Tbsp. lime juice
6 (4 oz.) boneless, skinless chicken breasts
lemon slices (as garnish)
Preparation

Combine breadcrumbs and lemon rind, stirring well.
Combine lemon juice, mustard and lime juice; brush mixture over both sides of chicken.
Dredge chicken in breadcrumbs.
Place chicken in baking dish coated with pan coating.
Sprinkle with remaining breadcrumbs.
Bake, uncovered, at 375\u00b0 for 15 minutes. Turn over and bake an additional 15 minutes. Garnish with remaining lemon slices if desired.
