Potato Onion Cheddar Soup - cooking recipe

Ingredients
    1 carrot, shredded
    1 large onion
    2 Tbsp. oil
    1 large garlic clove, minced
    4 large potatoes, shredded
    2 large celery stalks, sliced
    2 c. chicken broth
    1/2 tsp. salt
    1/2 tsp. pepper
    1 c. milk
    8 oz. sharp Cheddar, cubed or shredded
    minced parsley
Preparation
    Cook garlic, onion, celery and potatoes in oil for 10 minutes; stir often.
    Add broth, carrot, salt and pepper.
    Boil; reduce heat and simmer for 20 minutes.
    Stir in milk; heat through.
    Add cheese and parsley.
    Makes 4 servings.
