Dottie'S Carrot Cucumber Relish - cooking recipe

Ingredients
    3 1/2 c. ground cucumbers (seeded if large)
    1 1/2 c. ground onions
    1 1/2 c. ground carrots
    2 Tbsp. salt
    2 c. sugar
    1 1/2 c. vinegar
    1 1/2 tsp. celery seed
    1 1/2 tsp. mustard seed
Preparation
    Combine the first 4 ingredients.
    Let stand for 3 hours. Drain well.
    Combine and boil the sugar, vinegar, celery seed and mustard seed.
    Add vegetables; simmer for 20 minutes.
    Pour into sterile pint jars; seal and place in water bath for 5 minutes. Makes 2 1/2 pints.
