German Potato Salad - cooking recipe
Ingredients

8 medium-size potatoes
10 strips bacon
1/2 c. flour
1/2 c. vinegar
2 c. water
1 1/2 c. sugar
1 medium-size onion, diced
salt and pepper to taste
Preparation

Cook potatoes with skins.
Peel when warm and cut up as desired.
Season with salt and pepper.
Add diced onion.
Brown bacon, remove from pan and break into small pieces.
Add to potatoes.
Add flour to bacon grease and stir until smooth.
Add vinegar and water to flour mixture and stir until it bubbles. Then add sugar, stirring thoroughly, until the mixture has a clarified look or transparent.
Pour over potatoes.
Mix thoroughly.
Let stand overnight, if possible, to let flavors permeate the potatoes.
