Kentucky Pecan Cake - cooking recipe
Ingredients

2 1/2 c. self-rising flour
2 c. sugar
1 1/2 c. vegetable oil
1 c. applesauce
2 1/2 Tbsp. cinnamon
4 eggs, separated (save both parts)
2 Tbsp. hot water
1 c. pecans, chopped
powdered sugar
Preparation

Combine first 7 ingredients in order listed.
Beat until smooth. Stir in pecans.
Beat egg whites until stiff; fold into batter.
Pour mixture into an ungreased 10-inch tube pan.
Bake at 350\u00b0 for 1 1/2 hours.
Invert pan and cool cake completely; remove from pan.
Sprinkle top of cake with powdered sugar.
