Marinated Black-Eyed Peas - cooking recipe
Ingredients

1 can black-eyed peas, drained
1 rib celery, chopped
1 Tbsp. onion, chopped
1 Tbsp. vegetable oil
1 Tbsp. vinegar
1 Tbsp. mayonnaise
dash of cayenne pepper
1 tomato, diced
Preparation

Rinse peas with cold water and drain well.
Add chopped celery and onion.
Combine oil, vinegar, cayenne pepper and mayonnaise. Pour over peas.
Stir gently.
Chill in refrigerator several hours or overnight.
At serving time, add diced tomato.
Makes 4 servings.
