Tabbulah Salad - cooking recipe

Ingredients
    1 c. bulgur or finely cracked wheat
    1 1/2 c. minced or chopped parsley
    3 tomatoes, peeled and chopped
    1 green pepper, chopped
    1 cucumber, peeled and chopped
    2 to 3 green onions, chopped
    1/2 c. olive oil
    1/2 c. fresh lemon juice
    salt
    pepper
    1/2 c. minced fresh mint leaves
Preparation
    Soften bulgur by soaking 1 hour in enough water to cover. Drain, pressing out excess water.
    Combine all other ingredients and toss until well coated.
    Chill.
