Zucchini Bread - cooking recipe
Ingredients

3 eggs
1 c. oil
2 c. sugar
2 c. zucchini
2 tsp. vanilla
3 c. flour
1 tsp. soda
1 tsp. cinnamon
1 tsp. salt
2 c. pecans
1 Tbsp. margarine
2 c. flour
2 c. milk (use nonfat dry milk plus 2 c. water if preferred)
1 tsp. salt
4 eggs or 1 egg and 6 whites
Preparation

Melt margarine 1 minute in microwave.
Add flour, milk, salt and eggs.
Whisk only until smooth to the consistency of cream. Pour into custard cups (2/3 full) and cook on lower rack (bottom heat is required).
Do not preheat oven.
Set oven for 450\u00b0 for 20 minutes, then 350\u00b0 for 20 to 25 minutes, or until golden brown. Turn oven off.
Pierce with sharp knife.
Let stand 5 minutes in oven to dry interior.
