Chicken And Rice - cooking recipe
Ingredients

2 pkg. boneless, skinless chicken breasts
2/3 c. bottled Italian salad dressing
1 1/3 c. uncooked Minute rice
2 bags (16 oz. each) frozen broccoli, carrots and onions
1 can bamboo shoots, chopped
1 red or orange pepper, chopped
2 cans French fried onions
3 1/2 c. or 2 (14 1/2 oz.) cans chicken broth
1 tsp. Italian seasoning
Preparation

Place chicken breast in 9 x 13-inch baking dish.
Pour salad dressing over chicken.
Bake, uncovered, at 400\u00b0 for 20 minutes. Place rice, vegetables and 1 can of fried onions around and under chicken.
When 20 minutes is up, mix chicken broth and Italian seasoning; pour over chicken and vegetables.
Bake, uncovered, for 25 minutes.
Top with remaining onions and bake 2 to 3 minutes longer.
Let stand 5 to 10 minutes before serving.
