Fruity Bread Pudding - cooking recipe

Ingredients
    2/3 C. dried mixed fruit
    2/3 C. apple juice
    1 1/2 C. stale bread, cut into 1/2 inch cubes
    1 tsp. cinnamon
    1 large banana, sliced
    2/3 C. skim milk
    1 Tbsp. raw sugar
    1 small pkg. vanilla pudding
Preparation
    Preheat oven to 400 degrees. Put fruit into a pan with the juice and bring to a boil. Remove from heat, stir in bread, cinnamon and banana. Spoon into a 5 cup baking dish and pour milk over it. Sprinkle with raw sugar. Bake 25 to 30 minutes, until firm. Meanwhile, prepare pudding according to instructions and when the fruited pan comes out of the oven, spoon the vanilla pudding on top. Chill in the refrigerator until firm.
