Eggplant Casserole - cooking recipe
Ingredients

eggplant
beaten egg
flour
onion (as desired)
green peppers (as desired)
tomato soup
Preparation
-
Slice eggplant.
Dip into egg and flour.
Brown in nonstick pan sprayed with Pam (brown slowly).
Saute onion and green peppers in nonstick pan.
Salt as desired.
Layer into casserole dish with tomato soup.
Bake at 350\u00b0 for 30 minutes or until done. You may layer with cheese, but this makes more calories.
