Seafood Gumbo - cooking recipe
Ingredients

4 Tbsp. oleo
4 Tbsp. flour
2 large onions, chopped
1 clove garlic, chopped
2 cans tomatoes, crushed with juice
2 cans condensed chicken broth
2 c. water
1 tsp. salt
1 Tbsp. Worcestershire sauce
1/4 tsp. large red pepper seasoning
1 lb. shrimp
1 lb. flaked fish
2 Tbsp. filet powder
Preparation

Make a roux (gravy) with oleo and flour in large kettle. Cook, stirring constantly, until a rich brown.
Stir in onions and garlic; cook, stirring often, until soft, about 10 minutes.
Add tomatoes, chicken broth, water, salt, Worcestershire sauce and pepper seasoning.
Simmer 15 minutes.
Add shrimp and fish flakes. Continue cooking until shrimp turns pink (no more than 10 to 12 minutes).
Stir in filet powder (always last) to thicken.
Serve over rice.
Makes 8 servings.
Recipe may be doubled.
