Pepper Steak - cooking recipe

Ingredients
    2 lb. London broil or tri-tip, all fat removed
    1/4 c. oil
    1 c. water
    1 onion, sliced
    1 tsp. garlic salt
    2 bell peppers, sliced
    1 Tbsp. cornstarch
    2 tsp. sugar
    2 Tbsp. soy sauce
    2 large tomatoes
    2 c. cooked rice
Preparation
    Slice meat very thin across grain.
    Cook in oil until loses pink.
    Add water, onion and garlic.
    Simmer 40 minutes.
    Add bell peppers; cook 5 minutes.
    Blanch tomatoes in boiling water.
    Remove skin; quarter.
    Mix starch, sugar, soy and add to meat.
    Simmer 1 minute.
    Add tomatoes.
    Simmer 5 minutes.
    Serve over rice.
