Eggplant Casserole - cooking recipe
Ingredients

1 large eggplant, diced
1 large onion, diced
3 Tbsp. margarine
3 Tbsp. flour
1 can stewed tomatoes
3 Tbsp. brown sugar
bread crumbs
Preparation

Cook diced eggplant.
Drain.
Saute onion in margarine.
Add flour to thicken.
Stir in tomatoes and brown sugar.
Pour over eggplant and put in casserole dish.
Sprinkle bread crumbs on top. Bake at 350\u00b0 for 15 to 20 minutes.
