Fish Vera Cruz - cooking recipe
Ingredients

2 lb. fresh fish (haddock or snapper)
2 limes
salt and pepper
4 Tbsp. olive oil
2 medium onions, sliced
1 to 2 cloves garlic
2 c. tomato puree
1/2 c. water
6 stuffed green olives, sliced
1/2 c. capers
2 pickled jalapeno chilli peppers, chopped fine
Preparation

Marinate fish in lime juice.
Salt and pepper to taste.
Turn a couple of times.
Remove, pat dry.
Brown in olive oil.
Remove from pan.
Add to pan, onions and garlic; fry until brown.
Add tomato puree, water, olives, capers and chilli peppers and cook covered for 10 minutes.
Add fish and spoon sauce over it.
Cook 7 to 10 minutes longer.
Serves 6.
