Dole Raisin Pineapple Muffins - cooking recipe

Ingredients
    1/2 c. brown sugar, packed
    1/4 c. margarine
    1 egg
    3/4 c. Dole pineapple juice
    1 tsp. grated orange peel
    1 1/2 c. all-purpose flour
    1/2 c. whole wheat flour
    1 1/2 tsp. baking powder
    1/2 tsp. baking soda
    1/4 tsp. salt
    1/4 tsp. ground cinnamon
    1 c. Dole raisins
Preparation
    Beat sugar and margarine until light and fluffy.
    Beat in egg, juice and orange peel.
    Combine remaining ingredients.
    Stir into juice mixture until moistened.
    Spoon batter in 6 muffin cups, coated with cooking spray.
    Bake at 375\u00b0 for 25 minutes.
    Cool on rack and serve warm.
    Makes 6 large muffins.
