Vegetarian One Pot - cooking recipe
Ingredients

1 c. uncooked white or brown rice
1 (16 oz.) can black, pink or red beans, undrained
1 (16 oz.) can stewed tomatoes
Preparation

Combine all ingredients in a medium-size saucepan.
Bring to a boil and simmer until the rice is cooked and most of the liquid is absorbed, 5 to 20 minutes, depending on the kind of rice used. Vegetables and seasonings can be added to taste.
Onion or bell peppers are especially good.
Serves 4.
