Mini Fruit Cakes - cooking recipe

Ingredients
    1 c. self-rising flour
    1 c. sugar
    4 eggs, separated
    1 lb. chopped nuts (1/2 pecans, 1/2 walnuts)
    1 lb. chopped dates
    1 tsp. vanilla
    1 stick butter
    1 stick margarine
Preparation
    Mix dates, nuts and flour together.
    Melt margarine and butter; let cool.
    Add to dry mixture.
    Add sugar, egg yolks and vanilla.
    Beat egg whites until stiff and fold into mixture.
    Line small muffin tins with paper and fill half full.
    Bake at 325\u00b0 for 18 to 20 minutes.
    Makes 8 1/2 dozen.
