Apple Cup Cakes - cooking recipe

Ingredients
    1 c. sugar
    1/4 c. vegetable oil
    1 c. unpeeled apple, grated
    1/2 c. dates, chopped or raisins
    1 egg
    1/4 tsp. salt
    1/2 tsp. cinnamon
    1/2 tsp. nutmeg
    1/2 c. nuts, chopped
    1 c. flour
    1 tsp. soda
Preparation
    Cream sugar and oil well; add egg.
    Beat until frothy.
    Add grated apples with soda mixed in.
    Add dry ingredients a little at a time, beating between each addition.
    Add nuts and dates or raisins and mix well.
    Fill muffin cups 2/3 full and bake 30 minutes at 350\u00b0.
    Makes 12 cupcakes.
    These freeze well.
