Pumpkin Muffins - cooking recipe

Ingredients
    1 c. pumpkin
    2 eggs
    1 tsp. vanilla
    2/3 c. non-fat dry milk
    6 Tbsp. flour
    2 tsp. pumpkin pie spice
    1 tsp. cinnamon
    1 tsp. baking soda
    6 tsp. sugar (add artificial sweetener, if needed)
    1/2 c. grated carrots
    2 Tbsp. raisins
    1/2 c. pineapple, drained
Preparation
    Combine dry ingredients in bowl.
    In separate bowl, combine eggs and vanilla; add pumpkin.
    Combine dry ingredients; mix well with mixer.
    Stir in raisins, carrots and pineapple.
    Pour into sprayed muffin tins.
    Bake at 350\u00b0 for 10 to 12 minutes.
    Makes 12 muffins, 48 calories each.
