Alligator Sauce Piquante - cooking recipe

Ingredients
    Italian dressing for marinating
    10 lb. alligator meat
    3 c. oil
    2 c. flour
    4 c. onion, chopped
    2 c. celery, chopped
    2 c. bell pepper, chopped
    2 (10 oz.) cans Ro-Tel tomatoes
    1 (8 oz.) can tomato paste
    2 pods garlic, chopped
    1 (4 oz.) can mushrooms
    8 to 10 c. water
    2 tsp. sugar
    salt to taste
    black and red pepper
    1 c. onion tops and parsley, chopped
Preparation
    Marinate meat overnight in Italian dressing, salt, red pepper, garlic powder and meat tenderizer.
    Add flour to oil to make a roux and cook until brown.
