Classic Candied Sweet Potatoes - cooking recipe

Ingredients
    6 medium sweet potatoes, well washed and tips cut off
    6 Tbsp. butter
    3/4 c. brown sugar
    1/2 tsp. grated lemon rind
    1/8 tsp. ground ginger
Preparation
    Boil sweet potatoes until tender; drain.
    Peel and cut potatoes lengthwise into 1/2-inch slices.
    Melt butter and sugar over medium heat.
    Add lemon rind and ginger.
    Put potatoes in a shallow, well buttered baking pan. Pour butter-sugar mixture on top.
    Bake, uncovered, for 20 minutes, or until glazed.
    Serves 6 to 8.
