Crabmeat Au Gratin - cooking recipe
Ingredients

1/2 lb. onions, chopped, using a combination of white and green onions
3 ribs celery, chopped
1/2 lb. butter
4 Tbsp. flour
1 large can evaporated milk
1 small can evaporated milk
2 egg yolks, beaten
2 lb. fresh white crabmeat
1 1/2 c. grated Cheddar cheese
salt and pepper to taste
Preparation

Saute onions and celery in butter until soft.
Add flour and blend.
Add milk and blend.
Remove from heat.
Add egg yolks, crabmeat, salt, pepper and cheese.
Put in shells or in a casserole.
Top with cheese.
Bake at 350\u00b0 until heated through. Serves 6 to 8.
