Eggplant Casserole - cooking recipe

Ingredients
    1 large eggplant
    1 egg
    1/2 c cubed medium sharp cheese
    1/2 tsp salt
    Dash black pepper
    20 Ritz crackers, crushed
    Cheese Slices
    Pat of butter
Preparation
    Peel and cut up eggplant; boil in small amount of water on low heat until tender.
    Drain and mash; add cubed cheese, salt, pepper, egg and crushed Ritz crackers.
    Turn into buttered casserole.
    Top with sliced cheese to cover. Add butter pat and bake in 375 degree oven for 20 to 30 minutes.
