Lime Scallion Chicken - cooking recipe

Ingredients
    1 bunch scallions
    1 1/2 lb. skinless, boneless chicken breasts
    1/4 c. flour
    2 Tbsp. canola oil or vegetable oil
    2 Tbsp. light margarine, separated
    2 oz. lime juice or 2 fresh limes
Preparation
    Slice scallions into thin rings (use most of scallion).
    Cut breasts into about 8 to 10 pieces; coat with flour.
    Heat oil and 1 tablespoon margarine in a large skillet over medium-high heat. Add chicken; brown on each side until golden, about 4 minutes on each side.
    Remove chicken to a serving tray and keep warm.
    Add 1 tablespoon margarine and scallions to pan; cook for 2 minutes.
    Add lime juice; cook 30 seconds.
    Pour over chicken and serve.
    Yield: 4 servings.
