Zucchini Casserole - cooking recipe
Ingredients

2 to 3 c. sliced or shredded zucchini (about 8 small)
1 c. mayo
1 small onion, chopped
salt and pepper
1 c. Parmesan cheese
2 eggs
bread crumbs
Preparation

Boil shredded zucchini in salted water 5 to 8 minutes. Drain. Saut onions in small amount of oleo. Beat eggs. Add cheese and mayo, onions, salt and pepper to taste.
Mix with zucchini. Pour into buttered casserole. Top with bread crumbs. Bake at 350\u00b0 for about 30 minutes.
